Chestnut cake

Chestnut Cake Ingredients: Preparation time 2 hours. Serves 4 people. 500g/600g chestnuts, 200g granulated sugar, 100g butter, 80g of peeled almonds, 3 eggs, the grated rind of ½ a lemon, butter and flour to grease the cake tin.
Recipe: Peel the chestnuts and boil them in lightly salted water. Drain and put them through the vegetable mill to obtain a fine purée. Transfer to a bowl. In another bowl, beat the egg yolks with the sugar. Add the butter cut into pieces, the chestnut purée, the chopped almonds and the grated lemon rind. Separately, beat the egg whites until stiff and add them a little at a time to the mixture. Lightly butter and flour a cake tin, pour in the mixture, level it out and bake in a hot oven for approximately 40 minutes. Leave to cool before serving. Bibliography:
