OVEN-BAKED POLENTA WITH MUSHROOMS

Ingredients:  Serves 4 people.  500g polenta (maize) flour, 60g dried mushrooms, butter, grated cheese, milk, salt.

 
Recipe: Prepare a fairly thick polenta (500g polenta flour in a good litre of water.  Use coarsely ground polenta flour if possible).  Tip the polenta out of the pan and leave it to cool.  In the meanwhile cook the dried mushrooms (previously soaked for several hours to soften them) for about ten minutes in butter.  Cut the cold polenta into slices.  Butter a deep, heat-resistant glass dish generously and arrange a layer or polenta slices on the bottom.  Cover them with a thin layer of mushrooms, sprinkle a few spoonfuls of milk and then repeat the process starting again with the polenta.  The final layer must be polenta dotted with butter.  Cook in the oven at a moderate heat for about an hour.  The surface should be well browned.
