Pappardelle with wild boar

PAPPARDELLE WITH WILD BOAR Ingredients: 1 kg cubed wild boar meat, laurel, sage, juniper, 1l red wine, onion, carrots, celery, extra-virgin olive oil, ½ kg peeled tomatoes, pappardelle (thick pasta ribbons). Recipe: Marinate the cubed wild boar meat with the bay leaf, sage and juniper in the red wine for 24 hours. Lightly fry the chopped onion, carrots and celery in the oil. Add the meat well-drained of its marinade, brown it well and then add the wine marinade. Add the peeled and chopped tomatoes and cook for about 1 hour. Cook the pappardelle, then sauté them in the pan with the meat sauce and serve very hot. Bibliography:
