POLENTA MARINATA 

Ingredients: maize flour, oil 

Method: Make the polenta as normal with maize flour; when it is half cooked add the boiled cicerchia (chickling pea: Lathyrus sativus, similar to a small chickpea) and oil, let it cook and mix it continuously.

It can be eaten as it is or it can be served with a mixture of lard and onion, or with a sauce made with lard, rind, sausage and tomato sauce.  Beans can be used instead of the cicerchia.
