POTATOES AND CASCIOLE

 

Ingredients: Serves 6 people. 1 kg mountain potatoes, 500 gr marron chestnuts, extra-virgin olive oil, salt.

Recipe: Peel the potatoes and chestnuts and boil them in two separate pans in plenty of boiling water.  When the chestnuts are cooked, remove their fine outside skin, break them up and add them to the potatoes which have been cut into small pieces too.  Dress with oil and salt and serve.  A little red wine can be added to the cooking water if desired.
