TAGLIATELLE WITH PORCINI MUSHROOMS

 

Ingredients: Serves 4 people: 350g egg tagliatelle, 500g small porcini mushrooms, 20g butter, 2cloves of garlic, parsley, oil, salt and pepper.

Recipe:  Clean the mushrooms and slice them thinly.  Heat the oil in a frying pan and cook the sliced garlic until it colours.  Add the mushrooms, a little chopped parsley, salt and pepper.  Cook uncovered for 10 minutes, stirring frequently.  In the meantime cook the tagliatelle in plenty of salted water until al dente, drain and add them to the mushrooms, first removing the garlic.  Stir for a minute, add the butter and serve hot.  A tip from the chef:  “Never use water to wash porcini; remove the bottom part of the stalk covered in earth and any other bad parts, scrape the porcini lightly and then gently rub them with kitchen roll.
